There's not much you can do: few recipes are able to please every palate like chicken kebabs. Marinading, for a unique taste
For a more intense flavour, we recommend soaking the kebab in a marinade sauce before cooking: you can make different kinds of it, depending on the taste you want the meat to acquire. The classic one is composed of oil, lemon, rosemary and oregano, but you can dare and copy the Americans who use buttermilk, which makes the chicken very tender. If you want a more peculiar sauce, you can prepare the one recommended by chef Simone Rugiati: lemon juice, a teaspoon of chestnut honey, a tablespoon of curry, one of oil and one of mustard. Generally, you just need to let the chicken rest for a quarter of an hour, but you can leave it to rest also much longer.
Cooking, minute by minute
There are of course several ways to cook chicken kebabs. In any case, time is the secret. If you choose a cast-iron hotplate, it's a matter of minutes: those necessary to heat up the hotplate before cooking. If you use a frying pan, grease it with a little oil and spread it over all the pan with a napkin. The same goes for the oven. Let the kebabs cook on one side for some minutes and then turn them on the other side, always keeping an eye on the cooking.
If you are a BBQ connoisseur instead, turn the kebabs often and take care not to burn them too much, moistening the meat with a little oil.

The taste of a chicken kebab also depends on what goes with it: if you make them yourself, have fun with vegetables: peppers, tomatoes, onions, courgettes, mushrooms, carrots.
