Are Sundays a synonym of broth in your house too? We had no doubts. All in all, Sunday chicken broth is one of the most popular rituals on holy days. But there is just one dilemma: how to use the leftover boiled chicken? Simple: to create creative and tasty recipes. Find out which ones by reading on the article.
1. Boiled chicken meatballs
Simple and tasty, they’ll make even your children happy.
All you need to do is take some bread and soak it in milk for 15 minutes.
Once it has been squeezed, crumble it into a terracotta bowl together with the leftover boiled chicken and add some Parmesan cheese, eggs, a little parsley and a pinch of salt too.
At this point mix the whole thing with your bare hands and once you’ll have the dough, form medium-sized discs (or balls), dip them in breadcrumbs and fry them in seed oil.
2. Salad with boiled chicken.
A quick and fresh dish, which can also be used as a starter.
Stir-fry boiled chicken pieces with a drizzle of olive oil until golden brown.
Allow them to cool, place them in a bowl and add some salad cut into strips, some apple slices and some walnuts.
Season normally with salt, oil and white vinegar.
3. Chicken couscous
An easy and ideal one-course meal to make when you are short of time.
Take a frying pan with two knobs of butter and soften 1/2 a shallot.
Once softened, add asparagus and peas and let it cook for about 3 minutes.
In the meantime, in another pot, cook the couscous.
When all the lumps will have been removed and it will have cooled down, add the chicken, the vegetables, a little lemon juice and season with salt and pepper.
4. Potato and chicken dumplings An alternative to the usual pasta Boil 200 g of potatoes and mash them in a puree adding also the leftover boiled chicken to the mixture. At this point add 3 egg yolks, 40 g of parmesan cheese, a pinch of salt and some nutmeg. Knead, make long strips of dough and then cut them into dumplings. Cook in abundant salted water and season with a sauce of choice.
